I think it all depends on the quality and a good quality bagel trumps challah for a closed sandwich as challah tends to crumble. But a good bagel should be ashamed of its hole and be nearly closed at the point of consumption, as seen at Beigel Bake. A holy bagel is no match for challah though. Also, do you not think Grodzinski’s in Stamford Hill is a fair match for Daniel’s?”
