Here are some ideas on how to use veg from a tin . . . 

EASY ROASTIES: If you have an air fryer, tinned potatoes are great for creating roasties.

Simply season the spuds and douse in oil before putting in the air fryer. Cook for around 25 minutes until golden.

SWEETCORN FRITTERS: Try these as a lunch idea or a side dish. To make them, drain and mix a tin of sweetcorn with an egg, 100g of flour, one teaspoon of baking powder, spring onion, and red chilli if you don’t mind a bit of heat.

Blitz half the mixture and then combine with the remaining batter.

A couple of spoons of batter will be enough to make a single fritter — just fry in oil in a frying pan for a couple of minutes.

TOMATO SOUP: Make a delicious homemade soup or pasta sauce using tinned tomatoes.

Instagram food influencer Gemma Sokol recommends roasting a tin of plum tomatoes together with half a tin of water, three cloves of garlic and one chopped shallot, as well as half a cube of vegetable stock and a glug of olive oil for around half an hour.

Blitz the mixture with a tin of butter beans when it has cooled slightly, adding water to get the consistency you desire — more for soup and less for sauce. Season with salt and pepper to taste.

HOMEMADE HOUMOUS: This is a fab and easy dip that also works in a wrap or sandwich.

Whip up a batch by blitzing a tin of chickpeas with two tablespoons of tahini, and a clove of garlic, a squeeze of lemon, a tablespoon or two of olive oil, and a pinch of salt.

Use a little extra water or oil if the mixture is too thick.
