Here’s how to do it . . . 

CLUCKIN’ MAD: You will need chicken drumsticks or thighs.

Sainsbury’s has 2kg of drumsticks down from £3.75 to £3.35. Or Tesco’s 1.2kg pack is £2.82.

MARINADE: Ideally, marinate your chicken overnight, or as long as you can on the day, to tenderise the meat.

Pop the meat in a bowl and coat in buttermilk.

For ten pieces of chicken, you’ll need around 330ml of buttermilk.

Stir through a few cloves of smashed or minced garlic for extra flavour.

FLOUR POWER: When ready to cook, tip 225g of plain flour into a dish big enough for dipping the chicken.

Add a couple of tablespoons of corn flour or corn starch, which will make the chicken nice and crispy.

Then mix through two teaspoons of cayenne pepper and a teaspoon of salt.

Take the chicken out of its buttermilk marinade and roll in the flour.

FRY-YAY: You will need a high-sided pan at least an inch deep with vegetable oil to fry the chicken.

Work in batches, frying pieces for around ten minutes and turning until golden all over.

Finish off the chicken in a pre-heated 160-180C oven for about 30 minutes until cooked through.

Serve up with a big helping of coleslaw, fries and baked beans.

AIR-FRY CHICKEN: If you have an air- fryer, you can use this instead of deep frying the chicken or baking it — you will use less oil so it is also healthy.

Spray with a little oil before the chicken goes in, to crisp it up. Don’t crowd your air fryer.

Timings depend on your model, but ensure the chicken is cooked through and not pink before eating.

As a guide, according to online blogger The Recipe Critic, you are looking at 360C for 20 minutes, then turn the chicken and cook for another ten minutes at 165C. But cook for longer if needed.
