WHY not try flipping the script on Pancake Day?
When you’ve had your fill of the traditional treats, use the leftover mixture to make an even batter dish for later in the week.
Here are some ideas.
SAY FREEZE: Pour batter into a large ice cube tray or small storage tubs to make individual pancakes quickly.
When you want to use them, pop the frozen portions into the pan with some butter on a low heat.
The mixture will thaw and then cook and you’ll have breakfast pancakes in minutes.

MUFFIN LIKE IT: Pour the leftover batter into greased muffin tins and bake them in the oven until they’re golden brown.
These pancake muffins are perfect for a quick breakfast on the go or as a tasty snack.
Add any chocolate drops, nuts or dried fruit to make them even tastier.
VEG OUT: Turn surplus batter into vegetable fritters for a quick snack or side dish tonight.

Get a pack of Sainsbury’s Stamford Street Co frozen veg, 99p, and fry until soft in a pan.
Let it cool, then mix with the batter and season with salt and pepper in a bowl.
Heat the pan with a dash of oil and add the mixture, a spoon at a time — this amount should make one fritter.
Grate some cheese over the top as a finishing touch.
SLICE ’N’ EASY: Pour leftover batter into a shallow, greased oven-proof dish.
Then drop blueberries at random on the surface of the mixture.

The waffles’ crispy exterior and fluffy interior make them a lovely twist on traditional pancakes.
Serve them with your favourite toppings such as fresh fruit or yoghurt.
