Francisco Teran has been a security guard at a luxury watch store in Manhattan’s Upper East Side for almost two years. These days it feels like a totally new job.

Now, because of Covid-19, shoppers enter mainly by appointment, making Mr. Teran a combination bouncer, receptionist, health-care worker and sentinel.
